  • No matter which lesson you choose, Paul will set the pace to suit you. Whether you’re on a one day introductory course or a three day workshop, you’ll leave with the confidence you need to develop your skills in your own time. Learn how to differentiate cobs from bloomers, discover the secrets of the fermentation process and learn all the techniques you’ll need to create a vast range of breads. After mixing, kneading and shaping for a full day or longer, you’ll have several loaves to share with friends and family. Once they’ve all been devoured, put your new skills into practise and never buy bread from a supermarket loaf again!

  • Paul started baking aged 25 because he loved craft and needed an outlet. An Australian national, Paul ran a village bakery just outside his home city of Melbourne and it’s by producing bread for an appreciative community that he really honed his skills as a master baker. When Paul moved to England twenty years ago, he was ready to take the next step in his career. Teaching others to bake comes naturally to Paul and the success of his school, Panary, which has been a local Shaftesbury institution for over twenty years now, is a testament to this.

Paul's lessons take place at Panary in Shaftesbury. More detailed information will be sent to you once you've made a booking. 

When do these lessons take place?

Day one of all courses begins at 10am with subsequent days beginning at 9am. The day finishes between 5 and 6pm. 

What should I bring? 

No need to bring any special equipment. Paul will provide all tools and aprons. 

How many people per class?

Four/Five.
